- 6 large eggs
- 1 cup of diced potatoes (about 2 medium potatoes)
- 4 slices of bacon, chopped
- 1 cup of grated cheese (cheddar or your favorite)
- 1/2 cup of milk
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- Fresh herbs (like chives or parsley) for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the chopped bacon in a large oven-safe skillet over medium heat until crispy.
- Peel and dice the potatoes, then add them to the skillet with bacon drippings and cook until tender and lightly golden.
- Whisk together the eggs, milk, salt, and pepper in a bowl.
- Return the bacon to the skillet, pour the egg mixture over the potatoes and bacon, and sprinkle cheese on top.
- Bake in the oven for 20-25 minutes until the eggs are set and the top is golden.
- Garnish with fresh herbs, let cool slightly, then slice and serve.
