To whip up your own Garlic Potato Soup, you’ll need the following ingredients:
- 4 medium-sized potatoes, peeled and diced
- 1 large onion, chopped
- 4 cloves of garlic, minced
- 4 cups of vegetable or chicken broth
- 1 cup of milk or cream
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh parsley or chives for garnish
Instructions
- Heat olive oil in a large pot and sauté chopped onion until translucent, then add minced garlic and sauté for 2 more minutes.
- Add diced potatoes and stir for a couple of minutes.
- Pour in broth, bring to a boil, then reduce heat and simmer for about 20 minutes until potatoes are tender.
- Blend the soup until smooth, then stir in milk or cream and season with salt and pepper.
- Serve hot, garnished with fresh parsley or chives.
