Instructions
- Season lamb chops with salt, pepper, and rosemary, then rub in minced garlic.
- Heat olive oil in a skillet and sear lamb chops for 3-4 minutes on each side.
- Reduce heat, cover, and cook for an additional 5-7 minutes.
- Boil cubed potatoes in salted water until soft, about 15 minutes.
- Drain potatoes, then mash with heavy cream and butter until smooth.
- Serve lamb chops with mashed potatoes and garnish with chives.
