Description

Deliciously crispy Garlic Butter Hasselback Potatoes, infused with garlic and herbs.


Ingredients

Scale
  • 4 medium-sized russet potatoes
  • 1/2 cup unsalted butter, melted
  • 4 cloves of garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, chopped
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and scrub the potatoes, then slice them thinly, leaving the bottom intact.
  3. Mix melted butter, garlic, thyme, rosemary, salt, and pepper in a bowl.
  4. Brush the garlic butter mixture over the potatoes, reserving some for later.
  5. Place potatoes on a baking sheet and bake for 45-60 minutes, basting halfway through.
  6. Sprinkle Parmesan cheese over the potatoes during the last 10 minutes if desired.
  7. Garnish with parsley and serve hot.

Notes

  • Using wooden spoons can help prevent cutting all the way through the potatoes.
  • Adjust baking time based on potato size for desired tenderness.
