Deliciously crispy Garlic Butter Hasselback Potatoes, infused with garlic and herbs.
Ingredients

- 4 medium-sized russet potatoes
- 1/2 cup unsalted butter, melted
- 4 cloves of garlic, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 teaspoon fresh rosemary, chopped
- Salt and pepper, to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and scrub the potatoes, then slice them thinly, leaving the bottom intact.
- Mix melted butter, garlic, thyme, rosemary, salt, and pepper in a bowl.
- Brush the garlic butter mixture over the potatoes, reserving some for later.
- Place potatoes on a baking sheet and bake for 45-60 minutes, basting halfway through.
- Sprinkle Parmesan cheese over the potatoes during the last 10 minutes if desired.
- Garnish with parsley and serve hot.
Notes
- Using wooden spoons can help prevent cutting all the way through the potatoes.
- Adjust baking time based on potato size for desired tenderness.
