- 1 cup cherry tomatoes, halved
- 1 cup diced bell peppers (any color)
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 packet ranch dressing mix
- 3 cups Fritos corn chips
- Fresh cilantro for garnish (optional)
Instructions
- Combine sweet corn, black beans, cherry tomatoes, and bell peppers in a large mixing bowl.
- Add shredded cheddar cheese, sour cream, and ranch dressing mix; stir until coated.
- Gently fold in Fritos corn chips just before serving.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
- For added flavor, let the salad chill longer if possible.
