Ingredients

  • 1 cup of strong brewed coffee, cooled
  • 2 tablespoons of coffee liqueur (optional)
  • 24 ladyfingers
  • 1 cup of mascarpone cheese
  • 1 cup of heavy whipping cream
  • 1/2 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 2 cups of fresh raspberries
  • Cocoa powder for dusting

Instructions

  1. Brew coffee and let it cool; mix in coffee liqueur if desired.
  2. In a bowl, whip mascarpone, cream, powdered sugar, and vanilla until soft peaks form.
  3. Quickly dip ladyfingers in the coffee, avoiding soaking.
  4. Layer dipped ladyfingers in a dish, followed by half the mascarpone mixture and half the raspberries.
  5. Repeat the layering with remaining ingredients.
  6. Cover and refrigerate for at least 4 hours or overnight for best flavor.
  7. Dust with cocoa powder before serving and enjoy!
