- 2 pounds of fresh figs, stems removed and chopped
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon salt
Instructions
- Wash the figs, remove stems, and chop them into small pieces.
- In a large pot, combine chopped figs, sugar, lemon juice, vanilla extract, cinnamon, and salt.
- Place the pot over medium heat, stirring frequently until the sugar dissolves and the mixture bubbles (about 5-10 minutes).
- Reduce heat to low and let it simmer for 30-40 minutes, stirring occasionally until thickened.
- To test, place a spoonful on a plate; if it holds its shape, it’s done.
- Pour the hot jam into sterilized jars, seal tightly, and cool to room temperature before refrigerating.
Notes
- For a smoother jam, blend the mixture after cooking.
- Store in the refrigerator for up to 2 weeks.
