Ingredients

  • 10 large jalapeño peppers
  • 1 pound shrimp, peeled and deveined
  • 1 cup cream cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and slice jalapeños in half, removing seeds if desired.
  2. Heat olive oil in a skillet, add shrimp, garlic powder, Cajun seasoning, salt, and black pepper; cook until shrimp are pink, about 3-4 minutes.
  3. Chop cooked shrimp and mix with cream cheese and cheddar cheese in a bowl.
  4. Spoon the shrimp mixture into each jalapeño half.
  5. Place stuffed jalapeños on a baking sheet and bake for 20 minutes until golden and bubbly.

Notes

  • For extra heat, leave the seeds in the jalapeños.
