Ingredients

  • 6 large eggs
  • 1 cup heavy cream
  • 1 cup cooked ham, diced
  • 1 cup shredded Swiss cheese
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste
  • 1 tablespoon fresh chives, chopped

For the Hollandaise Sauce:

  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter, melted
  • Salt, to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare pie crust in a pie dish, pre-bake if desired.
  3. Whisk together eggs, heavy cream, Dijon mustard, salt, and pepper.
  4. Fold in diced ham and shredded Swiss cheese.
  5. Pour mixture into crust and sprinkle with chopped chives.
  6. Bake for 35 to 40 minutes until set and golden brown.
  7. For hollandaise, whisk egg yolks and lemon juice over simmering water until thickened.
  8. Slowly add melted butter while whisking until smooth; season with salt.
  9. Let quiche rest for 15 minutes, serve warm with hollandaise sauce.

Notes

  • For a crispier crust, pre-bake the pie crust for 10 minutes.
  • Hollandaise sauce can be made while the quiche is baking.
