- 1 ready-made pie crust
- 6 large eggs
- 1 cup heavy cream
- 1 cup cooked ham, diced
- 1 cup shredded Swiss cheese
- 1 tablespoon Dijon mustard
- Salt and pepper, to taste
- 1 tablespoon fresh chives, chopped
For the Hollandaise Sauce:
- 3 large egg yolks
- 1 tablespoon lemon juice
- 1/2 cup unsalted butter, melted
- Salt, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Prepare pie crust in a pie dish, pre-bake if desired.
- Whisk together eggs, heavy cream, Dijon mustard, salt, and pepper.
- Fold in diced ham and shredded Swiss cheese.
- Pour mixture into crust and sprinkle with chopped chives.
- Bake for 35 to 40 minutes until set and golden brown.
- For hollandaise, whisk egg yolks and lemon juice over simmering water until thickened.
- Slowly add melted butter while whisking until smooth; season with salt.
- Let quiche rest for 15 minutes, serve warm with hollandaise sauce.
Notes
- For a crispier crust, pre-bake the pie crust for 10 minutes.
- Hollandaise sauce can be made while the quiche is baking.
