This Easy Slow Cooker French Onion Roast combines tender beef with rich flavors of onions and cheese for a comforting meal.

Ingredients

  • 34 pounds of chuck roast
  • 4 large onions, thinly sliced
  • 4 cloves of garlic, minced
  • 1 cup of beef broth
  • 1 cup of dry white wine (optional)
  • 2 tablespoons of Worcestershire sauce
  • 1 tablespoon of fresh thyme or 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 slices of Swiss cheese (for serving)
  • Fresh parsley for garnish (optional)

Instructions

  1. Thinly slice the onions and mince the garlic.
  2. Optional: Sear the chuck roast in a skillet until browned.
  3. Layer sliced onions in the slow cooker, followed by the seared roast, garlic, broth, wine, Worcestershire sauce, thyme, salt, and pepper.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. Check for tenderness, serve with Swiss cheese on top, and garnish with parsley.

Notes

  • For extra flavor, searing the roast is recommended but not mandatory.
