- 1 pound of shrimp, peeled and deveined
- 1 pound of smoked sausage, sliced
- 2 cups of long-grain rice
- 4 cups of chicken broth
- 1 medium onion, chopped
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 tablespoon of Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons of olive oil
- Chopped green onions for garnish
Instructions
- Sauté onion, bell pepper, and garlic in olive oil until soft.
- Add sausage and cook until browned.
- Stir in shrimp and cook until pink.
- Mix in rice until well combined.
- Pour in chicken broth and add Cajun seasoning; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Fluff rice with a fork and garnish with green onions before serving.
Notes
- Adjust Cajun seasoning to taste for a spicier dish.
- Leftovers can be stored in the refrigerator for up to 3 days.
