  • 1 pound of smoked sausage, sliced

  • 4 cups of chicken broth
  • 1 medium onion, chopped
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
  • Chopped green onions for garnish

Instructions

  1. Sauté onion, bell pepper, and garlic in olive oil until soft.
  2. Add sausage and cook until browned.
  3. Stir in shrimp and cook until pink.
  4. Mix in rice until well combined.
  5. Pour in chicken broth and add Cajun seasoning; bring to a boil.
  6. Reduce heat, cover, and simmer for 20 minutes.
  7. Fluff rice with a fork and garnish with green onions before serving.
