Ingredients

- 4 cups fresh rhubarb, chopped
- 1 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup old-fashioned oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 teaspoon cinnamon
Instructions
- Wash and chop the rhubarb into 1-inch pieces.
- In a bowl, combine rhubarb, sugar, cornstarch, and vanilla; stir until coated.
- In another bowl, mix oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
- Spread the rhubarb mixture in a greased baking dish and sprinkle the topping over it.
- Preheat oven to 350°F (175°C) and bake for about 45 minutes until golden brown.

- This dessert pairs well with vanilla ice cream or whipped cream.
