Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon cinnamon

Instructions

  1. Wash and chop the rhubarb into 1-inch pieces.
  2. In a bowl, combine rhubarb, sugar, cornstarch, and vanilla; stir until coated.
  3. In another bowl, mix oats, flour, brown sugar, melted butter, and cinnamon until crumbly.
  4. Spread the rhubarb mixture in a greased baking dish and sprinkle the topping over it.
  5. Preheat oven to 350°F (175°C) and bake for about 45 minutes until golden brown.
