Ingredients

- 2 pounds of potatoes (Yukon Gold or Russet work best)
- 2 large onions, thinly sliced
- 3 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of dried thyme
- 1 cup of beef or vegetable broth
- 1 cup of heavy cream
- 1 cup of shredded Gruyère cheese
- 1/2 cup of grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Caramelize sliced onions in olive oil with salt for 20-25 minutes.
- Wash, peel, and slice potatoes into thin rounds.
- Layer potatoes and caramelized onions in a greased baking dish, seasoning with thyme, salt, and pepper.
- Mix broth and cream, then pour over the layered ingredients.
- Top with Gruyère and Parmesan cheese.
- Cover with foil and bake for 45 minutes, then uncover and bake for an additional 15 minutes until golden brown.
Notes
- Using a mandoline helps achieve uniform potato slices.
- Let the dish cool slightly before serving for better slicing.
