Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) enchilada sauce
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook ground beef and onions in a skillet over medium heat until browned (5-7 minutes).
  2. Add garlic powder, chili powder, salt, and pepper; cook for 2 more minutes.
  3. Warm tortillas in the microwave for 30 seconds until soft.
  4. Spoon beef mixture into tortillas, sprinkle with cheese, and roll tightly; place seam-side down in a baking dish.
  5. Pour enchilada sauce over the tortillas and sprinkle with remaining cheese.
  6. Bake at 350°F (175°C) for 20 minutes until cheese is bubbly and golden.
