  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1/2 cup sliced black olives (optional)
  • 1/2 red onion, finely chopped
  • 2 cups Doritos chips, crushed
  • 1 cup Catalina dressing (or your preferred salad dressing)
  • Fresh cilantro, chopped for garnish (optional)

Instructions

  • Cook the Ground Beef:
    • In a large skillet, cook the ground beef over medium-high heat until browned. Drain any excess fat.
    • Add the taco seasoning mix and a little water according to the package instructions. Simmer for a few minutes until the beef is fully seasoned and the liquid is absorbed. Remove from heat and set aside to cool slightly.
  • Assemble the Salad:
    • In a large salad bowl, combine the chopped lettuce, cherry tomatoes, shredded cheddar cheese, black beans, corn, sliced black olives, and chopped red onion.
    • Add the cooked and slightly cooled ground beef to the salad mixture.
