- Fresh basil for garnish
- Vegan parmesan (optional)
Instructions
- Boil salted water and cook pasta according to package instructions.
- Heat olive oil in a pan and sauté minced garlic until fragrant.
- Add diced tomatoes and spinach to the pan, simmering for about 5 minutes.
- Season with oregano, salt, and pepper; mix well.
- Drain pasta and combine it with the sauce in the pan.
- Serve with fresh basil and vegan parmesan, if desired.
