These rich and moist pumpkin brownies are a delightful treat for fall or any time of year.

Ingredients

  • 1 cup pumpkin puree (canned or fresh)
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line or grease an 8×8 inch baking pan.
  3. Mix pumpkin puree, vegetable oil, sugars, eggs, and vanilla in a bowl until smooth.
  4. In another bowl, whisk flour, cocoa powder, baking powder, cinnamon, and salt.
  5. Gradually combine dry ingredients with wet mixture, stirring until just combined.
  6. Fold in chocolate chips if using.
  7. Pour batter into the prepared pan and bake for 25-30 minutes.
  8. Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before cutting.
