- 2 cups cooked chicken, shredded
- 4 cups mixed greens (lettuce, spinach, and arugula)
- 1 cup shredded carrots
- 1 cup red cabbage, thinly sliced
- 1 bell pepper, sliced (red or yellow for color)
- ½ cup edamame, shelled
- ¼ cup green onions, chopped
- ¼ cup sesame seeds
- ½ cup sesame dressing (store-bought or homemade)
Instructions
- Prepare the chicken by cooking and shredding it.
- Wash and chop the vegetables, slicing the bell pepper and shredding the carrots and cabbage.
- In a large bowl, combine mixed greens, chicken, carrots, cabbage, bell pepper, edamame, and green onions.
- Drizzle sesame dressing over the salad and toss gently.
- Sprinkle sesame seeds on top for added crunch.
- Serve immediately and enjoy!
