This hearty Crockpot Lasagna Soup combines all the flavors of traditional lasagna in a comforting soup form, perfect for chilly days.

Ingredients

  • 1 pound ground beef (or Italian sausage)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups beef broth
  • 2 cups water
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • Parmesan cheese for topping

Instructions

  1. Brown the ground beef or sausage in a skillet and drain excess grease.
  2. Sauté the diced onion and minced garlic until fragrant and translucent.
  3. Transfer meat mixture to the crockpot and add crushed tomatoes, beef broth, water, basil, oregano, salt, and pepper; stir to combine.
  4. Add broken lasagna noodles to the mixture.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours until noodles are tender.
  6. Stir in ricotta cheese 30 minutes before serving and sprinkle mozzarella cheese on top before serving.

Notes
