Ingredients

  • 34 pounds of corned beef brisket
  • 1 packet of seasoning (usually included with the brisket)
  • 1 pound of baby carrots
  • 1 pound of red potatoes, quartered
  • 1 large onion, sliced
  • 4 cups of beef broth or water
  • Optional: cabbage, cut into wedges

Instructions

  1. Rinse corned beef brisket under cold water and prepare the vegetables.
  2. Layer sliced onions in the bottom of the crockpot, followed by quartered potatoes and baby carrots.
  3. Place corned beef on top and sprinkle with seasoning.
  4. Pour in beef broth or water.
  5. Cover and cook on low for 8-10 hours or high for 4-6 hours.
  6. Add cabbage in the last hour of cooking, if desired.
