Here’s what you’ll need to whip up this delightful dish:
- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables (carrots, peas, corn)
- 1 packet onion soup mix
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Place chicken breasts in the bottom of the crock pot.
- Sprinkle uncooked rice on top of the chicken.
- Mix cream of chicken soup, chicken broth, onion soup mix, and garlic powder, then pour over the chicken and rice.
- Add frozen mixed vegetables evenly on top.
- Season with salt and pepper, cover, and cook on low for 4-6 hours or high for 2-3 hours without lifting the lid.
Notes
- For best results, do not open the lid during cooking.
- Garnish with fresh parsley before serving if desired.
