Here’s what you’ll need to whip up this delightful dish:

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (carrots, peas, corn)
  • 1 packet onion soup mix
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Place chicken breasts in the bottom of the crock pot.
  2. Sprinkle uncooked rice on top of the chicken.
  3. Mix cream of chicken soup, chicken broth, onion soup mix, and garlic powder, then pour over the chicken and rice.
  4. Add frozen mixed vegetables evenly on top.
  5. Season with salt and pepper, cover, and cook on low for 4-6 hours or high for 2-3 hours without lifting the lid.
