To create your own flavor explosion, gather the following ingredients:

  • 3 pounds beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Taco tortillas for serving
  • Fresh cilantro and lime for garnish

Instructions

  1. Remove stems and seeds from chiles; soak in hot water for 15 minutes.
  2. Blend softened chiles with garlic, onion, cumin, oregano, cinnamon, and a cup of beef broth until smooth.
  3. Season beef roast with salt and pepper; place in Crock Pot and pour marinade over it, adding remaining broth.
  4. Cook on low for 8 hours or high for 4 hours until tender.
  5. Shred meat with forks and serve in taco tortillas, garnished with cilantro and lime.
