To create your own flavor explosion, gather the following ingredients:
- 3 pounds beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- Taco tortillas for serving
- Fresh cilantro and lime for garnish
Instructions
- Remove stems and seeds from chiles; soak in hot water for 15 minutes.
- Blend softened chiles with garlic, onion, cumin, oregano, cinnamon, and a cup of beef broth until smooth.
- Season beef roast with salt and pepper; place in Crock Pot and pour marinade over it, adding remaining broth.
- Cook on low for 8 hours or high for 4 hours until tender.
- Shred meat with forks and serve in taco tortillas, garnished with cilantro and lime.
Notes
- For a spicier flavor, add more chiles.
- Let the meat rest before shredding for easier handling.
