Ingredients

  • 2 large russet potatoes, peeled and cubed
  • 1 cup shredded cheese (cheddar or mozzarella works great)
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 eggs, beaten
  • Oil for frying (vegetable or canola oil)

Instructions

  1. Peel and cube the potatoes, boil in salted water until fork-tender, then drain and cool.
  2. Mash the cooked potatoes in a bowl, seasoning with salt and pepper.
  3. Add cheese, breadcrumbs, green onions, garlic powder, and beaten eggs to the mashed potatoes; mix well.
  4. Roll the mixture into golf ball-sized balls and place on a parchment-lined baking sheet.
  5. Heat oil in a deep frying pan to 350°F (175°C).
  6. Fry potato balls in hot oil for 3-4 minutes on each side until golden brown.
  7. Remove from oil and drain on paper towels before serving.
