- 2 large russet potatoes, peeled and cubed
- 1 cup shredded cheese (cheddar or mozzarella works great)
- 1/2 cup breadcrumbs
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 2 eggs, beaten
- Oil for frying (vegetable or canola oil)
Instructions
- Peel and cube the potatoes, boil in salted water until fork-tender, then drain and cool.
- Mash the cooked potatoes in a bowl, seasoning with salt and pepper.
- Add cheese, breadcrumbs, green onions, garlic powder, and beaten eggs to the mashed potatoes; mix well.
- Roll the mixture into golf ball-sized balls and place on a parchment-lined baking sheet.
- Heat oil in a deep frying pan to 350°F (175°C).
- Fry potato balls in hot oil for 3-4 minutes on each side until golden brown.
- Remove from oil and drain on paper towels before serving.
