- 2 pounds of baby potatoes
- 4 tablespoons olive oil
- 4 cloves of garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- Optional: Parmesan cheese for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and cut the baby potatoes in half.
- In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Toss in the potatoes.
- Spread the coated potatoes on a baking sheet and roast for 30-35 minutes, turning halfway.
- Remove from oven, garnish with Parmesan if desired, and serve warm.

- For extra crispiness, ensure the potatoes are spread out on the baking sheet.
