Ingredients

  • 2 pounds of baby potatoes
  • 4 tablespoons olive oil
  • 4 cloves of garlic, minced
  • 1 tablespoon fresh rosemary, chopped

  • Salt and pepper to taste
  • Optional: Parmesan cheese for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the baby potatoes in half.
  3. In a bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Toss in the potatoes.
  4. Spread the coated potatoes on a baking sheet and roast for 30-35 minutes, turning halfway.
  5. Remove from oven, garnish with Parmesan if desired, and serve warm.
