  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs (panko works best)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 4 slices of your favorite bread (ciabatta or sourdough recommended)
  • 1 cup romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • Extra Parmesan for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and pound chicken breasts to even thickness.
  2. Set up a breading station: flour, beaten eggs, and a breadcrumb mixture with Parmesan, garlic powder, salt, and pepper. Coat chicken in flour, then egg, then breadcrumb mixture.
  3. Heat oil in a skillet and cook breaded chicken for 4-5 minutes on each side. Transfer to a baking sheet and bake for 10 minutes.
  4. Toast bread until golden. Assemble the sandwich with Caesar dressing, crispy chicken, romaine lettuce, and extra Parmesan.
  5. Cut the sandwich in half and serve immediately with fries or salad.
