- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs (panko works best)
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 4 slices of your favorite bread (ciabatta or sourdough recommended)
- 1 cup romaine lettuce, chopped
- 1/2 cup Caesar dressing
- Extra Parmesan for garnish
Instructions
- Preheat oven to 400°F (200°C) and pound chicken breasts to even thickness.
- Set up a breading station: flour, beaten eggs, and a breadcrumb mixture with Parmesan, garlic powder, salt, and pepper. Coat chicken in flour, then egg, then breadcrumb mixture.
- Heat oil in a skillet and cook breaded chicken for 4-5 minutes on each side. Transfer to a baking sheet and bake for 10 minutes.
- Toast bread until golden. Assemble the sandwich with Caesar dressing, crispy chicken, romaine lettuce, and extra Parmesan.
- Cut the sandwich in half and serve immediately with fries or salad.

- For extra flavor, marinate the chicken in dressing before breading.
