- 1 pound of fresh asparagus
- 1 cup of grated asiago cheese
- 1 cup of breadcrumbs (preferably panko for extra crunch)
- 2 large eggs
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and trim the asparagus, snapping off the woody ends.
- Set up a breading station with beaten eggs in one bowl and breadcrumbs, asiago cheese, garlic powder, salt, and pepper in another.
- Dip each asparagus spear in egg, then coat it in the breadcrumb mixture.
- Arrange the breaded spears on a parchment-lined baking sheet, spacing them apart.
- Lightly spray the asparagus with olive oil.
- Bake for 15 to 20 minutes until golden brown.
- Let cool for a few minutes before serving.
Notes
- For extra crunch, use panko breadcrumbs.
- Adjust seasoning to taste.
