Crispy baked asparagus coated in asiago cheese and breadcrumbs, perfect as a snack or side dish.

Ingredients

  • 1 pound of fresh asparagus
  • 1 cup of grated asiago cheese
  • 1 cup of breadcrumbs (preferably panko for extra crunch)
  • 2 large eggs
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and trim the asparagus, snapping off the woody ends.
  3. Set up a breading station with beaten eggs in one bowl and breadcrumbs, asiago cheese, garlic powder, salt, and pepper in another.
  4. Dip each asparagus spear in egg, then coat it in the breadcrumb mixture.
  5. Arrange the breaded spears on a parchment-lined baking sheet, spacing them apart.
  6. Lightly spray the asparagus with olive oil.
  7. Bake for 15 to 20 minutes until golden brown.
  8. Let cool for a few minutes before serving.

Notes

  • For extra crunch, use panko breadcrumbs.
