Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 4 cups spinach (fresh or frozen)
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 pinch of nutmeg (optional)

Instructions

  1. Cook the lasagna noodles in boiling salted water for 8-10 minutes, then drain.
  2. Sauté spinach in olive oil over medium heat until wilted (3-4 minutes).
  3. Mix ricotta, garlic powder, onion powder, salt, pepper, and nutmeg in a bowl.
  4. Layer in a baking dish: Alfredo sauce, noodles, ricotta mixture, spinach, and mozzarella. Repeat, finishing with noodles and Alfredo sauce on top.
  5. Cover with foil and bake at 375°F for 25 minutes, then uncover and bake for another 15-20 minutes until bubbly and golden.

Notes

  • Use fresh spinach for better flavor, or thaw and drain frozen spinach thoroughly.
