- 12 ounces of your favorite pasta (penne works great!)
- 2 large onions, thinly sliced
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup coconut cream or cashew cream
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a pan, add onions and salt, and caramelize for about 20 minutes until golden brown.
- Add minced garlic and cook for 1-2 minutes until fragrant.
- Pour in vegetable broth and coconut cream, stir, and simmer for 5 minutes.
- Cook pasta according to package instructions in salted water.
- Drain pasta, combine it with the sauce, season with balsamic vinegar, salt, and pepper, and garnish with parsley before serving.

- Feel free to use any pasta shape you prefer.
