Creamy vegan caramelized onion pasta that’s both rich and flavorful.

Ingredients

  • 12 ounces of your favorite pasta (penne works great!)
  • 2 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup coconut cream or cashew cream
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a pan, add onions and salt, and caramelize for about 20 minutes until golden brown.
  2. Add minced garlic and cook for 1-2 minutes until fragrant.
  3. Pour in vegetable broth and coconut cream, stir, and simmer for 5 minutes.
  4. Cook pasta according to package instructions in salted water.
  5. Drain pasta, combine it with the sauce, season with balsamic vinegar, salt, and pepper, and garnish with parsley before serving.
