- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1 teaspoon Italian seasoning
- Lemon wedges, for serving (optional)
Instructions
- Gather ingredients and prepare salmon fillets by rinsing and drying them.
- In a skillet, heat olive oil and sear salmon skin-side down until crispy, then flip and cook through.
- Add minced garlic to the skillet, sauté briefly, then pour in heavy cream and simmer until thickened.
- Stir in spinach and sun-dried tomatoes, allowing spinach to wilt.
- Add grated Parmesan cheese, seasoning with salt, pepper, and Italian seasoning.
- Return salmon to skillet, spoon sauce over it, and let simmer to warm through.
- Serve with sauce on top and optional lemon wedges.
