Ingredients

  • 1 package of fresh or frozen cheese ravioli
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, minced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of spinach, fresh or frozen
  • 1 cup of heavy cream
  • ½ cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Boil salted water and cook ravioli according to package instructions.
  2. Heat olive oil in a skillet, sauté garlic for 30 seconds.
  3. Add cherry tomatoes and cook until softened, about 2-3 minutes.
  4. Stir in spinach and cook until wilted, about 2-3 minutes.
  5. Pour in heavy cream, simmer for 5 minutes, and season with salt and pepper.
  6. Fold in cooked ravioli and grated Parmesan until combined.
  7. Serve hot, garnished with fresh basil.
