Instructions
- Heat olive oil in a skillet over medium heat, season chicken, and cook for 6-7 minutes per side until golden brown. Remove and set aside.
- Add minced garlic to the skillet and sauté for 30 seconds. Pour in heavy cream and chicken broth, stirring to combine.
- Add sun-dried tomatoes and Italian seasoning, simmer for 5 minutes.
- Stir in spinach until wilted, return chicken to the skillet, and simmer for an additional 3-4 minutes.
- Serve hot, topped with Parmesan cheese.
