Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 cup fresh basil, chopped
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Parmesan cheese, for serving (optional)

Instructions

  1. Gather and prepare the ingredients; season chicken with salt and pepper.
  2. Heat olive oil in a skillet and sear the chicken for 5-6 minutes on each side until golden brown.
  3. Remove chicken, add garlic to the skillet, sauté briefly, then add diced tomatoes and deglaze the pan.
  4. Lower heat, stir in heavy cream and simmer for 3-4 minutes; add Italian seasoning and adjust seasoning.
  5. Return chicken to the skillet, simmer in sauce for another 5 minutes.
  6. Stir in fresh basil just before serving and cook for another minute.
