- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup heavy cream
- 1 cup fresh basil, chopped
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
- Parmesan cheese, for serving (optional)
Instructions
- Gather and prepare the ingredients; season chicken with salt and pepper.
- Heat olive oil in a skillet and sear the chicken for 5-6 minutes on each side until golden brown.
- Remove chicken, add garlic to the skillet, sauté briefly, then add diced tomatoes and deglaze the pan.
- Lower heat, stir in heavy cream and simmer for 3-4 minutes; add Italian seasoning and adjust seasoning.
- Return chicken to the skillet, simmer in sauce for another 5 minutes.
- Stir in fresh basil just before serving and cook for another minute.
Notes
- Serve with Parmesan cheese if desired.
- This dish pairs well with pasta or rice.
