- 8 ounces of penne pasta
- 1 pound of boneless, skinless chicken breasts, diced
- 2 tablespoons olive oil
- 1 cup sun-dried tomatoes (packed in oil), chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Prepare all ingredients: chop sun-dried tomatoes, mince garlic, and dice chicken.
- Cook penne pasta in salted boiling water until al dente, then drain and reserve some pasta water.
- In a skillet, heat olive oil and sauté chicken until golden and cooked through.
- Add garlic and sun-dried tomatoes to the skillet, sauté for a few minutes.
- Pour in heavy cream, simmer, and stir in Parmesan until melted and creamy.
- Add the drained pasta to the sauce, combining well and adjusting with reserved pasta water as needed.
- Serve immediately, garnished with fresh basil and extra Parmesan if desired.

- Ensure chicken is cooked through with no pink inside.
