Ingredients

  • 8 ounces of penne pasta
  • 1 pound of boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 cup sun-dried tomatoes (packed in oil), chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Prepare all ingredients: chop sun-dried tomatoes, mince garlic, and dice chicken.
  2. Cook penne pasta in salted boiling water until al dente, then drain and reserve some pasta water.
  3. In a skillet, heat olive oil and sauté chicken until golden and cooked through.
  4. Add garlic and sun-dried tomatoes to the skillet, sauté for a few minutes.
  5. Pour in heavy cream, simmer, and stir in Parmesan until melted and creamy.
  6. Add the drained pasta to the sauce, combining well and adjusting with reserved pasta water as needed.
  7. Serve immediately, garnished with fresh basil and extra Parmesan if desired.
