Ingredients
Scale
To whip up this indulgent dish, you’ll need the following ingredients:
- 8 ounces of pasta (spaghetti or fettuccine work well)
- 2 tablespoons of olive oil
- 1 cup of sliced mushrooms (button or cremini)
- 3 cups of fresh spinach
- 2 cloves of garlic, minced
- 1 cup of heavy cream
- ½ cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Boil salted water and cook pasta until al dente, reserving a cup of pasta water.
- In a skillet, heat olive oil and sauté mushrooms for 5 minutes, then add garlic and cook for 1 minute.
- Add spinach to the skillet and cook until wilted, about 2-3 minutes.
- Pour in heavy cream, bring to simmer, and stir in Parmesan until melted. Season with salt and pepper.
- Combine the drained pasta with the sauce, adjusting consistency with reserved pasta water if needed.
- Serve hot, garnished with fresh parsley if desired.
Notes
- Feel free to customize the dish by adding other vegetables or proteins.
- For a lighter version, use half-and-half instead of heavy cream.
