- 9 lasagna noodles
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups marinara sauce
Instructions
- Preheat oven to 375°F (190°C).
- Boil lasagna noodles in salted water until al dente, then drain.
- Sauté mushrooms and garlic in olive oil, add spinach, and season.
- Mix ricotta, half the mozzarella, and half the Parmesan in a bowl.
- Layer marinara sauce, noodles, cheese mixture, sautéed vegetables, and more sauce in a baking dish, finishing with noodles and sauce.
- Cover with foil and bake for 25 minutes, then remove foil and bake for another 15-20 minutes.
- Let cool for 10 minutes before slicing.
Notes
- For extra flavor, add herbs or spices of your choice.
- Can substitute other cheeses as desired.
