Ingredients

  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups marinara sauce

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil lasagna noodles in salted water until al dente, then drain.
  3. Sauté mushrooms and garlic in olive oil, add spinach, and season.
  4. Mix ricotta, half the mozzarella, and half the Parmesan in a bowl.
  5. Layer marinara sauce, noodles, cheese mixture, sautéed vegetables, and more sauce in a baking dish, finishing with noodles and sauce.
  6. Cover with foil and bake for 25 minutes, then remove foil and bake for another 15-20 minutes.
  7. Let cool for 10 minutes before slicing.

Notes

  • For extra flavor, add herbs or spices of your choice.
  • Can substitute other cheeses as desired.
