- 1 pound Italian sausage (mild or spicy, your choice)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound gnocchi (store-bought or homemade)
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions
- Brown the sausage in a large pot over medium heat for 5-7 minutes.
- Add diced onion and minced garlic, sauté for 3-4 minutes until translucent.
- Pour in chicken broth and simmer for 10 minutes.
- Stir in heavy cream and gnocchi, cook for 3-5 minutes until gnocchi float.
- Add spinach and Italian seasoning, stir until spinach wilts (1-2 minutes).
- Season with salt and pepper to taste.
Notes
- Feel free to use spicy sausage for an extra kick.
- This soup can be stored in the fridge for up to 3 days.
