These creamy mashed potato cheese puffs are a delicious and comforting snack or appetizer.

Ingredients

  • 2 cups of mashed potatoes (preferably leftover)
  • 1 cup of shredded cheese (cheddar or your favorite)
  • 1/2 cup of all-purpose flour
  • 2 large eggs
  • 1/4 cup of green onions, chopped
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine the mashed potatoes, cheese, flour, eggs, green onions, garlic powder, salt, and pepper until mixed well.
  2. Shape the mixture into golf ball-sized puffs and place on a lined baking sheet.
  3. Heat oil in a frying pan over medium heat.
  4. Fry the puffs in hot oil until golden brown, about 3-4 minutes on each side.
  5. Remove from oil and drain on paper towels. Serve hot.

Notes

  • Feel free to add herbs or spices to the mixture for extra flavor.
  • Leftover mashed potatoes work best for this recipe.
