Ingredients

- 2 cups of mashed potatoes (preferably leftover)
- 1 cup of shredded cheese (cheddar or your favorite)
- 1/2 cup of all-purpose flour
- 2 large eggs
- 1/4 cup of green onions, chopped
- 1/2 teaspoon of garlic powder
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, combine the mashed potatoes, cheese, flour, eggs, green onions, garlic powder, salt, and pepper until mixed well.
- Shape the mixture into golf ball-sized puffs and place on a lined baking sheet.
- Heat oil in a frying pan over medium heat.
- Fry the puffs in hot oil until golden brown, about 3-4 minutes on each side.
- Remove from oil and drain on paper towels. Serve hot.
Notes
- Feel free to add herbs or spices to the mixture for extra flavor.
- Leftover mashed potatoes work best for this recipe.
