To create this delicious soup, you’ll need the following ingredients:
- 1 lb boneless, skinless chicken breasts
- 2 cups gnocchi (store-bought or homemade)
- 4 cups chicken broth
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 onion, diced
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Parmesan cheese, for serving
These ingredients are easy to find, and you might even have some of them on hand already. I love using fresh spinach to add a pop of color and nutrition!
Instructions
- Heat olive oil in a large pot, sauté onion and garlic until fragrant, then add chicken and brown on both sides.
- Pour in chicken broth, bring to a simmer, and add gnocchi; cook for 2-3 minutes.
- Reduce heat, stir in heavy cream and Italian seasoning, then add spinach and season with salt and pepper.
- Serve hot, topped with Parmesan cheese.
