Instructions
- Sauté onion in olive oil until translucent, then add garlic and ginger.
- Add curry powder and turmeric; stir for 1 minute.
- Mix in the butter beans, coating them with the spices.
- Pour in coconut milk and simmer for 10 minutes.
- Season with salt and pepper, serve garnished with cilantro.
