To whip up this Creamy Chicken Fajita Pasta, you’ll need the following ingredients:
- 2 cups of pasta (fettuccine or penne work best)
- 1 pound of boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 bell pepper (any color), sliced
- 1 onion, sliced
- 1 packet of fajita seasoning
- 1 cup of heavy cream
- 1 cup of shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Cook the pasta in salted water until al dente, then drain and set aside.
- Heat olive oil in a skillet, season chicken with salt, pepper, and half the fajita seasoning, and cook until done.
- Sauté sliced bell pepper and onion in the same skillet for about 5 minutes, then add the remaining fajita seasoning.
- Slice cooked chicken and return to skillet with vegetables. Add heavy cream and simmer until slightly thickened.
- Toss in the drained pasta and shredded cheese, mixing until well-coated.
- Garnish with cilantro if desired, serve warm, and enjoy.
