Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Cajun seasoning
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Chopped parsley, for garnish (optional)

Instructions

  1. Prepare all ingredients by peeling shrimp, dicing onion and bell pepper, and mincing garlic.
  2. In a skillet, heat olive oil and sauté onion and bell pepper until soft.
  3. Add garlic and cook until fragrant.
  4. Stir in rice and toast for 2 minutes.
  5. Pour in chicken broth, bring to a boil, then simmer covered for 15 minutes.
  6. Add shrimp and Cajun seasoning, cooking until shrimp are pink.
  7. Stir in heavy cream and simmer for 2-3 minutes.
  8. Season to taste, garnish with parsley, and serve.
