- 1 lb large shrimp, peeled and deveined
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon Cajun seasoning
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced (red or green)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Chopped parsley, for garnish (optional)
Instructions
- Prepare all ingredients by peeling shrimp, dicing onion and bell pepper, and mincing garlic.
- In a skillet, heat olive oil and sauté onion and bell pepper until soft.
- Add garlic and cook until fragrant.
- Stir in rice and toast for 2 minutes.
- Pour in chicken broth, bring to a boil, then simmer covered for 15 minutes.
- Add shrimp and Cajun seasoning, cooking until shrimp are pink.
- Stir in heavy cream and simmer for 2-3 minutes.
- Season to taste, garnish with parsley, and serve.
Notes
- For extra flavor, consider adding other spices or vegetables.
- Serve with crusty bread for a complete meal.
