Instructions
- Heat olive oil in a skillet over medium heat. Sauté diced chicken with salt, pepper, and Cajun seasoning until browned. Set aside.
- Add onion, garlic, and bell pepper to the same skillet and sauté until tender.
- Return chicken to the skillet, add diced tomatoes, chicken broth, and orzo, and simmer.
- Stir in heavy cream and cook for 10 minutes until orzo is tender and sauce thickens.
- Preheat oven to 350°F, transfer mixture to a baking dish, top with cheese, and bake for 15-20 minutes until cheese is bubbly.
