This creamy avocado pasta is a delicious and quick meal that combines fresh ingredients for a flavorful dish.

Ingredients

  • 2 ripe avocados
  • 1 cup of fresh basil leaves
  • 2 cloves of garlic
  • 2 tablespoons of lemon juice

  • 8 ounces of your favorite pasta (spaghetti works great!)
  • Parmesan cheese for garnish (optional)

Instructions

  1. Cook pasta in salted boiling water according to package instructions, stirring occasionally.
  2. In a food processor, blend avocados, basil, garlic, and lemon juice until smooth. Gradually add olive oil and season with salt and pepper.
  3. Drain pasta and return to pot. Add avocado sauce and toss to coat.
  4. Plate the pasta, garnish with Parmesan cheese if desired, and serve.
