Ingredients

- 2 ripe avocados
- 1 cup of fresh basil leaves
- 2 cloves of garlic
- 2 tablespoons of lemon juice
- 1/4 cup of olive oil
- Salt and pepper to taste
- 8 ounces of your favorite pasta (spaghetti works great!)
- Parmesan cheese for garnish (optional)
Instructions
- Cook pasta in salted boiling water according to package instructions, stirring occasionally.
- In a food processor, blend avocados, basil, garlic, and lemon juice until smooth. Gradually add olive oil and season with salt and pepper.
- Drain pasta and return to pot. Add avocado sauce and toss to coat.
- Plate the pasta, garnish with Parmesan cheese if desired, and serve.
Notes
- Feel free to adjust seasonings to your taste.
- This dish is best served fresh but can be stored in the refrigerator for a short time.
