Gather these ingredients for a scrumptious dish:
- 2 cups cooked chicken, shredded
- 1 cup long-grain white rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 cup sour cream
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1/2 cup diced onions
- 1/2 cup frozen peas and carrots (optional)
- 1 tablespoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil or butter for greasing
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9×13 inch casserole dish with olive oil or butter.
- In a large bowl, mix chicken, rice, cream of chicken soup, chicken broth, sour cream, cheese, onions, garlic powder, and peas and carrots. Season with salt and pepper.
- Pour the mixture into the prepared casserole dish and spread evenly.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until golden and bubbly.
- Let sit for 5 minutes before serving warm.
