For this recipe, you will need the following ingredients:
- 4 medium sweet potatoes
- 1 cup fresh cranberries
- 1 large apple, peeled and diced
- 1/4 cup brown sugar
- 1/4 cup butter, softened
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 cup chopped pecans (optional)
- Salt to taste
Instructions
- Preheat oven to 400°F (200°C) and bake sweet potatoes for 45 minutes until tender.
- Combine cranberries, apple, brown sugar, butter, cinnamon, and nutmeg in a saucepan; cook until cranberries burst and mixture thickens (about 10 minutes).
- Let baked sweet potatoes cool, cut in half, and scoop out insides; mix with cranberry-apple mixture and add salt to taste.
- Preheat oven to 350°F (175°C), refill sweet potato skins with the mixture, top with pecans if desired, and bake for another 20 minutes.
