For this recipe, you will need the following ingredients:

  • 4 medium sweet potatoes
  • 1 cup fresh cranberries
  • 1 large apple, peeled and diced
  • 1/4 cup brown sugar
  • 1/4 cup butter, softened
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup chopped pecans (optional)
  • Salt to taste

Instructions

  1. Preheat oven to 400°F (200°C) and bake sweet potatoes for 45 minutes until tender.
  2. Combine cranberries, apple, brown sugar, butter, cinnamon, and nutmeg in a saucepan; cook until cranberries burst and mixture thickens (about 10 minutes).
  3. Let baked sweet potatoes cool, cut in half, and scoop out insides; mix with cranberry-apple mixture and add salt to taste.
  4. Preheat oven to 350°F (175°C), refill sweet potato skins with the mixture, top with pecans if desired, and bake for another 20 minutes.
