- 4 large russet potatoes
- 2 cups cooked chicken, shredded
- 1 packet ranch seasoning mix
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Butter for topping (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and prick the russet potatoes, bake for 45-60 minutes until fork-tender.
- Mix shredded chicken, ranch seasoning, cream cheese, half cheddar cheese, bacon, and green onions in a bowl.
- After baking, cool potatoes, cut a slit, and fluff the insides. Stuff with the chicken mixture.
- Top with remaining cheddar cheese and bake for an additional 10-15 minutes until cheese is melted.
Notes
- Feel free to add other toppings like sour cream or jalapeños.
- Store leftovers in an airtight container in the refrigerator.
