Ingredients

  • 8 ounces of pasta (your choice: rotini, penne, or fusilli)
  • 1 cup of cooked crab meat (fresh or canned)
  • 1 cup of cherry tomatoes, halved
  • 1 cup of diced cucumbers
  • 1/2 cup of red onion, finely chopped
  • 1/4 cup of fresh parsley, chopped
  • 1/2 cup of mayonnaise
  • 2 tablespoons of Dijon mustard
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water according to package instructions; stir occasionally.
  2. Drain pasta and rinse under cold water to cool.
  3. In a bowl, combine cooled pasta, crab meat, tomatoes, cucumbers, onion, and parsley.
  4. In another bowl, whisk mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  5. Pour dressing over salad mixture and toss until well-coated.
  6. Chill in the refrigerator for at least 30 minutes before serving.
