- 4 large flour tortillas
- 6 eggs
- 1 cup of cooked breakfast sausage or bacon, chopped
- 1 cup of shredded cheese (cheddar or pepper jack)
- 1 cup of diced potatoes (or hash browns)
- 1/2 cup of diced bell peppers
- 1/2 cup of diced onions
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- Hot sauce (optional)
Instructions
- Cook diced potatoes in a skillet until golden and crispy.
- Add bell peppers and onions; sauté until soft.
- Whisk eggs and scramble them in the skillet.
- Combine sausage or bacon, potatoes, veggies, and cheese; mix well.
- Fill tortillas with the mixture and roll them tightly.
- Toast burritos seam-side down in the skillet until golden brown.
