Ingredients

  • 6 eggs
  • 1 cup of cooked breakfast sausage or bacon, chopped

  • 1/2 cup of diced bell peppers
  • 1/2 cup of diced onions
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Hot sauce (optional)

Instructions

  1. Cook diced potatoes in a skillet until golden and crispy.
  2. Add bell peppers and onions; sauté until soft.
  3. Whisk eggs and scramble them in the skillet.
  4. Combine sausage or bacon, potatoes, veggies, and cheese; mix well.
  5. Fill tortillas with the mixture and roll them tightly.
  6. Toast burritos seam-side down in the skillet until golden brown.
