Deliciously fluffy Coffee Cake Muffins with a cinnamon swirl topping.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup sour cream
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare muffin tin with liners or grease it.
  3. Whisk together flour, baking powder, and salt in a bowl.
  4. Cream butter and granulated sugar until fluffy.
  5. Add eggs and vanilla to the butter mixture, mixing well.
  6. Combine wet and dry ingredients, alternating with sour cream.
  7. Mix brown sugar and cinnamon in a small bowl.
  8. Fill muffin cups halfway, add cinnamon mixture, and cover with more batter.
  9. Bake for 20-25 minutes until a toothpick comes out clean.
  10. Cool in the tin for a few minutes, then transfer to a wire rack.
