- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet and sauté minced garlic and grated ginger for 1-2 minutes.
- Add coconut milk and bring to a gentle simmer.
- Stir in lemon juice and honey (or maple syrup).
- Place cod fillets in the skillet, season with salt and pepper, and cook for 5-7 minutes on each side.
- Remove from heat, garnish with fresh parsley, and serve with rice or veggies.
